Tempura is one of the most popular dishes in Japan. A layer of batter is deep-fried, but the results are different from the more familiar batter-fried fish. Tempura batter adds flavor to the vegetables and prawns. Use of a light soy sauce also gives the batter a unique taste.
Japanese chefs spend years perfecting the art of deep frying tempura. We show the basic steps of mixing the batter and deep frying as well as a few tricks, like removing the small deep-fried dots of batter to prevent a bad odor.
For deep frying tempura, carbon steel cookware is always recommended. This ensures healthy and safe cooking at high temperatures. You may also consider using a deep-frying pot with a thermometer. In the near future, we plan to share a brief article about the high safety standards of Japanese carbon steelware.

This is a popular dish that fully utilises the donabe's ability to enhance the taste of rice and salmon. Personally, we would prefer using seaweed as an ingredient, but the tester in the demonstration altered the recipe a bit for Australian customers.
A Japanese friend suggested using mashed onion rather than cubes at the end. Again, no set rules. It's your choice
You will notice that some ingredients are added after the heat is turned off. This uses the donabe's heat retention to cook the food thoroughly. Very clever.
Please beware that a clay pot performs with high heat. You must monitor the heat during the cooking process. It is highly recommended you watch some recipes and rice cooking instructions before the first use.

Get the most you can out of your seafood by using head-on prawns to make a savory stock. This gives the congee its distinctive orange-tinged colour and rich flavour.
The demonstrator cleverly uses a donabe's high heat retention to cook congee. First, high heat, then medium heat, and finally low heat.
We choose to use a donabe. You may use a normal pot for the recipe below.

]]>Korean stew requires long cooking times to soften the meat. In vacuum cooking, the food or soup is locked in an airtight vacuum after it has been cooked. The best result is achieved through the process.
To explain how vacuum pots work, we have two basic recipes. You can view the recipes by clicking on the first link below. Vacuum pots can be used for any type of stew or soup you like.
For instance, we cooked stew or soup for an hour, and then turned off the heat. As the food is kept in vacuum mode, the taste is preserved until it is time to serve the dish. The stew and soup taste better and lose less water during cooking.
As a result of the vacuum status, food ingredients can release their full flavour. Food is preserved fresher and longer inside the airtight pot.
Happycall IH vacuum pots are airtight, but they are not pressure cookers. You can also add ingredients during cooking by opening the lid. A self-standing, tempered glass lid lets you see what is going on during cooking.

Yakitori (焼き鳥) is a type of Japanese skewered chicken with vegetables. This recipe also shows us how to light up binchotan (Japanese white charcoal) and handle a grill or part of a grill that is made of natural diatom mud, which should not be washed with water. It is interesting to note that you may not see any red glow in binchotan, but the charcoal releases sustainable high heat that is perfect for any type of barbeque.
There are many different parts of chicken used for yakitori. To keep it simple, we use chicken thighs.
Users need common cooking know-how such as how to handle hot food, utensils, cookware and charcoal. The charcoal grill is strictly for outdoor use.

Teriyaki salmon is an easy recipe to make at home with a short preparation and cooking time. Teriyaki adds flavour to a salmon fillet and is just right when mixed with mushrooms. The salmon looks darker with the sauce, but inside it is pink and juicy. A delicious dish can be ready in 15 minutes.
We use the Happycall Double Pan in this video, but you can pan fry or bake the salmon as well.

This popular, tasty meal can be easily made with a Happycall vacuum pot. You can stir fry and stew all in one pot. The vacuum function helps release the full taste of the beef and red wine sauce without losing too much water. The demonstrator cooked the food for 30 minutes and then let the dish sit for 1.5 hours.
If you use a different cut of beef or another kind of meat, you may need to extend the cooking time. Cook until the meat is tender.

]]>FULL VIDEO: How do you season and maintain a Japanese carbon steel wok
Japanese carbon steel wok and frypan use special heat-treated metal to create the ultimate frying pan series. The layers of iron nitride and iron oxide on the frying pan’s surface make it highly resistant to rust and incredibly strong and durable.
Before first use... “Oil Seasoning”
First, wash the frying pan/wok’s inner and outer surface with dish soap. Once you have seasoned the inner surface with oil, you can use it right away.
Before every use... “Oil Return”
Professional and skilled amateur chefs always conduct “oil returns” on their frying pans before using them.
When finished
Post-stewing, steaming, and boiling maintenance
When using your frying pan/wok for stewing, steaming, or boiling, the hot water used may remove parts of the pan/wok’s acclimatized oil membrane. To avoid this, wash and dry the pan thoroughly after use and be sure to lightly reapply oil afterwards.
If food is burnt
Adding hot water and bringing it to a boil will soften the burned food and make it easier to remove. Then use a scrub brush to remove any final remnants.
The importance of a proper cooking temperature
If your oil is smoking, it means your temperature is too high.
Do not put your frypan/wok immediately on your electromagnetic cooktop with high heat. First, set the cooktop to low heat and let it heat up. Then use medium heat and slowly start to turn it up until it reaches the right temperature.
Blackish colour = Normal oxidation
The blackish colour you may find on the wok is a result of normal oxidation. Simply clean it with water and season it with oil according to the instructions.
Loose handles
You can use a screwdriver to tighten the handle’s bolt by turning it clockwise until the handle is firmly in place.
Food turning blackish
Foods like burdock root, lotus root, udo, and eggplant absorb a lot of iron and turn a blackish color. There is no effect on taste, nor does it pose any sort of harm if consumed.
Change of color during use
If you use your frying pan/wok to make tomato sauce, fruit jam, or other dishes that involve boiling sour ingredients for long periods of time, your frying pan’s surface may whiten in color. It is perfectly safe to continue using it. As you continue to cook with oil, the inner surface will gradually return to its original condition.
Uneven surface
The special heat-treatment process sometimes results in distinctive unevenness on the bottom, but this has no effect on the iron nitride and iron oxide layers or the pan’s performance. It is not possible to make a warped frying pan/wok’s bottom surface flat again.
Marks/whitening on wok
Please note that once you begin using your wok, it will no longer look new. Discolouration and dark marks all over the wok are common.
Whitening on the wok or frypan is normal. It may appear in patterns or in dots.
Do NOT scratch too hard
If you scratch hard enough to peel off the protective oil layer, no permanent damage is done. Simply maintain it with oil again and you will see the wok turn black again over the course of a few months.
This is normal and does not mean any chemical coating is coming off. No manufacturer would add chemical non-stick coating to its carbon steel cookware.
