Suehiro NEW CERAX Dual-Grit W-hetstone - #1000 / #6000

Suehiro New Cerax Dual-Grit Whetstone - #1000 / #6000 - CR-4800
Achieve and maintain a professional, razor-sharp edge on your Japanese knives with the Suehiro New Cerax Dual-Grit Whetstone. This combination water stone offers a complete sharpening solution in one compact unit, suitable for both home cooks and professional chefs.
The numbers in the title refer to the grit size, which indicates the coarseness of the stone’s surface. A lower number indicates a coarser texture for sharpening, while a higher number indicates a finer texture for polishing:
- #1000 Grit (Blue Side): A Medium grit used for the main sharpening phase. This side removes material to restore a dull edge and establish a sharp bevel.
- #6000 Grit (Yellow Side): A Fine grit used for finishing and polishing. This side smoothes the edge created by the #1000 side, resulting in a razor-sharp, mirror-like finish.

Care Instructions
- Soak Before Use: This is a soaking stone. Submerge it in water for at least 5-10 minutes until bubbles stop rising before sharpening.
- Drying: After use, rinse the stone and allow it to air dry completely in a shaded area before storing it in the case. Do not dry in direct sunlight or with rapid heat, as this may cause cracking.
- Flattening: Over time, the stone will develop a concave shape (dishing). Use the included Nagura or a dedicated flattening stone to keep the surface flat.
