Hiroshima Bingo Binchotan Japanese White Charcoal - 4kg (Quarter Cut)

Bingo Binchotan is a white charcoal produced in the Chugoku mountains of Hiroshima. This charcoal is a byproduct of the region's "Tatara" iron-making tradition, where forests were managed to fuel high-temperature furnaces. Today, the same forestry methods are used to source wood for charcoal production.

Manufacturers use indigenous Japanese Oak (Kunugi and Konara) to produce this charcoal. It is carbonised at high temperatures to create a dense fuel source. The result is a charcoal that provides consistent heat and allows for temperature control. It is often used in culinary settings to grill ingredients without adding artificial flavours.

While the Kishu and Tosa regions typically use Ubame oak, the Bingo region utilises a different hardwood profile with the following characteristics:

  • Clean Burning: It is free from chemical additives and produces less smoke and odour than standard black charcoal.

  • Outdoor Use Only: Burning charcoal releases carbon monoxide. Never use indoors or in enclosed spaces.
  • Moisture Risk: Binchotan may pop or spark if it has absorbed moisture. Store in a dry environment.
  • Lighting: Use a charcoal chimney with a mesh screen to prevent sparks. Do not use liquid lighter fluid.
  • General Safety: Keep away from children and pets.
  • Extinguishing: Do not use water, as this damages the charcoal for future use. Use an extinguishing pot (donabe) or starve the fire of oxygen.

About Bingo Binchotan Production

The production of Bingo Binchotan utilises the "Satoyama" forestry system established by the Tatara ironmaking history. The Chugoku region managed forests to fuel iron smelters, preserving stands of Japanese Oak. Contemporary charcoal makers use this wood to produce white charcoal known for its density.
