Premium Kishu Binchotan Japanese White Charcoal - 4kg (Mixed Cuts)

Kishu Binchotan from Wakayama Prefecture is the original Japanese white charcoal. Often cited as the "world's most expensive charcoal," it serves as the undisputed global benchmark for quality. Produced exclusively from the distinctively hard Ubame Oak (Quercus phillyraeoides), Kishu Binchotan is characterised by its extreme density, metallic sound when struck, and smooth, glass-like cross-section.

Its unique production method creates a structure with zero internal cavities. This results in powerful infrared rays with low convection heat—meaning it cooks food deeply via radiation without the drying effect of hot air. This 4kg pack offers this culinary perfection in a size manageable for serious home enthusiasts or smaller professional grills.

Traditionalists recognise three specific regions in Japan for authentic Binchotan production:

Important Note on Sizing: Why Mixed Cuts?

The Ubame Oak used for Kishu Binchotan is wild-harvested from steep cliffs and grows in twisted, irregular shapes. Because this wood is incredibly scarce and difficult to harvest, artisans must utilise every viable part of the tree to minimise waste.

Consequently, this pack contains Mixed Cuts. The box will include a variation of sizes, ranging from smaller round branches to quarter-sized split logs, depending entirely on the natural shape of the wood harvested. All cuts provide the same premium heat performance.

About Kishu Binchotan

Kishu Binchotan traces its origins to the late 17th century in Wakayama Prefecture. It is defined by the use of Ubame Oak (Quercus phillyraeoides) and a specific kiln process where the charcoal is carbonised at approx. 1000°C and then rapidly cooled with ash. This process creates a carbon structure so dense that the charcoal conducts electricity and produces a clear metallic ring when struck.
