River Light Kiwame Nitrided Carbon Steel Induction Frypan - 24cm

The Kiwame ('Ultimate') series comes from River Light, a Japanese maker that produces carbon steel pans and nothing else. This 24cm frypan has a 15.5cm flat base — wider than the same-size wok's — giving full contact for eggs, pancakes and a couple of fillets, at just 830g.

The steel is nitrided — a heat treatment that hardens the surface against rust — so the pan is ready to season out of the box and easier to look after than untreated iron.

Seasoning & Care

Use & Care

  • First use: A one-time 5-minute oil seasoning is all it takes.
  • After cooking: Wash with warm water while still warm, dry thoroughly over low heat, then wipe on a thin coat of oil.
  • Storage: Don't leave food sitting in the pan — it's a cooking tool, not a storage container.
  • Rust: Almost always a sign of too little oil. Scrub it off and re-season — the pan will recover.
  • Acidic foods: Tomatoes and vinegar are fine in short bursts — read our guide before simmering them.
