River Light Kiwame Nitrided Carbon Steel Steak Pan - 28cm
The Kiwame ('Ultimate') series comes from River Light, a Japanese maker that produces carbon steel pans and nothing else. This is the searing specialist of the series: 2mm steel — thicker than the standard 1.6mm — and a 22.5cm flat base, the widest of any Kiwame pan, so it holds its heat when a cold steak hits it.
The steel is nitrided — a heat treatment that hardens the surface against rust — so the pan is ready to season out of the box and easier to look after than untreated iron. Available as the pan alone or with a matching stainless steel lid.

Seasoning & Care
