Okonomiyaki is a popular Japanese pancake. It is a mixture of eggs, flour and your choice of ingredients.

Note that yam is the most essential ingredient in this recipe. Some cooks try to prepare Okonomiyaki without success simply because yam was not added.

The Happycall double pan is perfect for cooking Okonomiyaki. You do not need to worry the most difficult part: flipping the pancake! 

It is strongly recommend that you use Japanese ingredients, including Japanese mayonnaise and bonito flakes. Everything can be purchased from Woolworths online. 

Ingredients

  • 70g of self-raising flour
  • 70g of cold water
  • 60g of yam
  • 1/4 of a medium onion
  • A few pieces of cabbage
  • 2 eggs
  • 3 stripes of bacon
  • Dried shaved bonito for garnish

Instructions

  1. Prepare 70g of self-raising flour.
  2. Cut the cabbage into slices. Cut the onion into cubes.
  3. The yam must be ground into a mash. This is absolutely essential. You may use a pair of rubber gloves to avoid irritating your skin.

  4. Mix the self-raising flour with water. The ratio of flour to water is 1:1. Stir well.
  5. Add the mashed yam, eggs, cabbage, and onion with all the seasonings. Stir and let it sit for 10 minutes.
  6. Preheat the double pan on medium high heat for 1 minute or until you feel the surface is hot enough for cooking.

  7. Add oil and then the mixture. Spread the mixture evenly in the pan.
  8. Turn the heat down to medium. Close the lid and cook for 3 minutes.
  9. Open the lid and add 3 strips of bacon. Then close the lid and cook for 2 to 5 minutes. This will help the bacon stick to the mixture and form a base for the Okonomiyaki.
  10. If the mixture is thin and the base is well-cooked at this point, you may flip the pan immediately after adding bacon. Every cooktop is different. You may turn the heat down to low and cut the cooking time in half if needed.
  11. Flip to the other side. Ensure to clean the oil trap when dirty. Cook for 5 to 7 minutes. You may open and check the pancake periodically.

  12. When it is almost done, flip the pan back to its original position. Turn off the heat. Use a fork or chopstick to poke the food and see if it is soft enough. The food is ready when the fork or chopstick pokes cleanly through the pancake.
  13. Add Japanese Mayonnaise and dried shaved bonito top.

Additional information: 

  1. Remember a reasonably heated cookware and heated oil (not overheating) are key.
  2. Users will need basic cooking techniques and common sense (understanding of proper heat control, knowing how to check the food periodically, and so on).
  3. Heat level, Please note that the heat levels shown below are for general reference only. Every cooktop is different. The following ranges apply if 10 is the maximum.
  • Low heat: the heat level is 1-2.
  • Medium low heat: the heat level is 3-4.
  • Medium heat: the heat level is 5.
  • Medium high heat: the heat level is 7-8.
  • High heat: the heat level is 9-10.
