"親子丼" (Oyakodon) translates to the "parent-and-child bowl." It is a cherished meal in Japan. Preparing Oyakodon at home is simple. You will need just a few ingredients and roughly 20 minutes of your time.

Ingredients:

  • 1 tablespoon olive oil (or vegetable oil)
  • 1/2 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 onion, thinly sliced
  • 1/4 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 1/4 cup dashi stock (or water)
  • 1/4 teaspoon sugar
  • 2 eggs, beaten
  • 1/4 cup chopped green onions (optional)
  • 2 servings of cooked rice

Instructions:

  1. Heat the olive oil in an Oyakodon pan or a skillet over medium heat. Add the chicken and cook until lightly browned.
  2. Add the thinly sliced onion to the skillet and sauté until translucent.
  3. In a separate bowl, combine the soy sauce, mirin, dashi stock, and sugar. Pour this mixture over the chicken and onion in the pan.
  4. Allow it to simmer for a few minutes to ensure the chicken is fully cooked. Some people might opt to use a lid to hasten the cooking process at this stage, but it is truly optional.
  5. Slowly pour the beaten eggs over the chicken and onion mixture. Let it cook until the eggs are set but still slightly runny in the center. 
  6. Spoon the Oyakodon into a bowl of warm rice. You can garnish it with chopped green onions if desired.
