You will need: Japanese Konro Hibachi Grill

Warm up with a zesty kick from Melbourne chef and musician Roger Young's Kingfish Wings with Spicy Jalapeño Marinade. This dish is a fantastic starter for any Izakaya-inspired meal, combining succulent kingfish wings with a punchy jalapeño marinade.

Instructions

  1. Prepare the Marinade: In a blender, combine the jalapeño slices, garlic, mirin, soy sauce, sesame oil, and lemon juice. Blend until smooth. Taste and adjust the seasoning if necessary.
  2. Marinate the Kingfish Wings: Place the kingfish wings in a shallow dish or resealable plastic bag. Pour the marinade over the wings, ensuring they are well coated. Marinate in the refrigerator for at least 30 minutes, preferably for a few hours to allow the flavours to develop.
  3. Preheat the Konro Grill: Set up your konro hibachi grill with charcoal and preheat until the coals are glowing and hot.
  4. Grill the Kingfish Wings: Place the marinated wings on the hot grill. Cook for about 4-5 minutes on each side, or until the fish is cooked through and has a nice char.
  5. Serve: Garnish the grilled kingfish wings with pimped Kewpie mayo, sweet Japanese pickles, and a wedge of lemon. Enjoy!
