A Korean griddle is a broad, flat cooking appliance, traditionally used in Korean cooking. It is perfect for grilling meats, seafood, and vegetables, and is particularly famous for dishes like Bulgogi and Galbi.

Before cooking, it is recommended to apply a light layer of cooking oil on the surface of non-stick griddles.

Korean griddles are designed for uniform heat distribution. It is crucial to preheat them correctly. For gas stoves, place the griddle over a medium flame to heat for a few minutes. For electric or induction cooktops, set it to a medium setting until the desired temperature is reached.

The versatility of the Korean griddle is one of its standout features. Here are some tips for cooking various foods:

  • Meats: For meats, especially thinly sliced varieties, quick and even cooking on the griddle is key. Arrange in a single layer and flip once browning begins. The high heat sears the meat, locking in juices. Searing on the side allows fats to render towards the centre, offering a healthier option.
  • Seafood: Seafood, particularly delicate types like shrimp or squid, benefits from the griddle's even heat distribution. Lightly oil the griddle to prevent sticking, and season the seafood to enhance its flavour. The griddle's design helps to concentrate juices in the centre, intensifying the taste.
  • Vegetables: For vegetables, a light application of oil and your choice of seasoning is recommended. Grill until they achieve a slight char, which imparts a smoky flavour. Placing them in the centre of the griddle and mixing with kimchi can add a rich depth of flavour.

Cleaning and Maintenance

After cooking, allow the griddle to cool before cleaning. Gently scrub with soapy water. Avoid harsh detergents on cast iron to preserve the seasoning.
