Recipe: Korean Seafood Pancakes (Haemul Pajeon) using Happycall Double Pan

Korean Seafood Pancakes or Haemul Pajeon (해물파전) are often served in restaurants. They are made with seafood and green onion, but you can make use of any seafood you fancy – squid, mussels, clams, oysters, lobster, etc. Choose ingredients to suit your taste and your diet. Vegetarians can simply omit the seafood.

Tips

  • Please note how the cook cut the green onion in the video. This technique is recommended as a way to release the full taste of the onions.
  • The Happycall double pan speeds up the cooking process to about 6 minutes with less oil splatters. It is easy to flip the pan with the pancake. 
  • Variations are numerous. You may refer to other popular recipes, such as Korean Bapsang and My Korean Kitchen.

Ingredients  

  • 2 green onion 
  • 1 squid
  • small prawn 300g
  • 1 red chili pepper
  • pancake mixture (please see below)
  • egg (1 per each piece of pancake. You may cook 4 pieces in a Happycall double pan. 4 pieces require 4 eggs.)

Pancake mixture

  • Korean pancake mix 500g (You can buy it at a Korean/Asian grocery store.)
  • tempura flour 50g (Either a Korean or Japanese brand is fine.)
  • water 550g (The ratio of mix to water is 1:1.)
  • salt and pepper to taste

If you cannot find a Korean pancake mix, the following ingredients can substitute:

  • cake flour 200g
  • fortified bread flour 200g
  • corn flour 150g
  • water 550g
  • salt and pepper to taste

Steps

  1. Preheat the double pan for 30 seconds over medium high heat. Add oil. Turn the heat down to medium.
  2. Add green onion. (Use the cutting technique demonstrated in the video.) Cook for about 15 to 30 seconds and then add pancake mix. (We used just a bit of pancake mix in the video. If you use more to cover the whole pan, please add at least 3 eggs in Step 4. Please note that pancake mix must not be too thick).

  3. Add seafood on top of the pancake and evenly spread it all over the pancake. Add more pancake mixture on top of the seafood to form another base. 
  4. Crack open an egg on top and break up the yoke. (See video demonstration.) Alternatively, you can beat the egg in a small bowl and then pour it on top. (Steps 2-4 may take 2 to 3 minutes. If it takes less than that, please allow enough time to let the pancake cook and form a solid base before flipping.)

  5. Close the lid and flip to the other side.
  6. Let the pancake cook for 2 to 3 minutes. Open the lid and enjoy!

Additional information: 

  1. Remember a reasonably heated pan and heated oil (not overheating) are key.
  2. Users will need basic cooking techniques and common sense (understanding of proper heat control, knowing how to check the food periodically, and so on).
  3. Heat level, Please note that the heat levels shown below are for general reference only. Every cooktop is different. The following ranges apply if 10 is the maximum.
  • Low heat: the heat level is 1-2.
  • Medium low heat: the heat level is 3-4.
  • Medium heat: the heat level is 5.
  • Medium high heat: the heat level is 7-8.
  • High heat: the heat level is 9-10.
