About Asahi Antibacterial Rubber Cutting Board
Asahi is one of the two major cutting board manufacturers in Japan. You can find their boards are sold in many commercial kitchen stores.
Asahi board has a flat surface and is easy to clean. It seems harder than common rubber boards, but actually protects your blades very well.
The advantages of using a rubber cutting board
The yellow-coloured boards are made of high density antibacterial material that is hygienic and easy to clean. Because of health concerns, all sushi restaurants in Japan are banned from using wooden cutting boards and are only allowed to use boards made of this material.
Unlike wooden boards, which will buckle easily over time, these boards will remain flat for a long time. Although dense, the board is made of rubber, which will actually hold the edge of your knife while you cut.
The board is not designed for choppers or serrated knives.
