Kai Seki Magoroku Sushi Sashimi Knife - 210mm
The Kai Seki Magoroku Sashimi Knife — a traditional 'yanagiba' (willow leaf blade) — is the essential tool for preparing sushi and sashimi at home. Its long, graceful blade slices through delicate raw fish in a single, uninterrupted stroke, preserving the pristine texture and flavour of the ingredients.
What is a Sashimi Knife (Yanagiba)?
The sashimi knife is a long, thin slicing knife used in Japanese cuisine. Its length allows the chef to use a long, pulling motion to cut through a block of fish in one continuous slice from heel to tip. This technique, combined with the blade's acute single-bevel edge, prevents bruising and results in a smooth, glossy cut surface that is the hallmark of high-quality sashimi.
What's Included
- 1 x Kai Seki Magoroku Sushi Sashimi Knife - 210mm
Key Features
- High-Performance Steel: The blade is forged from high-carbon Molybdenum Vanadium stainless steel, ensuring an exceptionally sharp edge, superior edge retention, and excellent corrosion resistance.
- Traditional Single-Bevel Edge: The blade is sharpened on one side only ('kataba') to create a razor-thin edge for the most precise, clean cuts on delicate fish.
- Durable Composite Wood Handle: The hexagonal handle is crafted from composite wood, offering the timeless beauty and comfortable grip of natural wood with enhanced durability and water resistance.
- Balanced for Precision: The knife is beautifully balanced by a sturdy nylon bolster, providing comfort and control for the long, graceful strokes required for sashimi.
Care Instructions
- Hand wash with warm water and mild detergent straight after use, then dry thoroughly before storing.
- Not dishwasher safe — heat and harsh detergents damage the edge and wooden handle.
- Never cut bones or frozen food, and avoid twisting the blade — the fine single-bevel edge is designed for slicing only.
- Sharpen with a whetstone — single-bevel blades are not suited to pull-through sharpeners.
