Premium Tosa Binchotan Japanese White Charcoal - 2kg (Quarter Cut)
Tosa Binchotan Japanese White Charcoal - 2kg (Quarter Cut)
While Kishu (Wakayama) is the historical birthplace of binchotan, Tosa (Kochi) is the "Powerhouse" of authentic white charcoal. Produced from the exact same timber species—the dense Ubame Oak—Tosa Binchotan is famous for its intense firepower and long burn duration.
In Japan, Tosa Binchotan is particularly favoured by traditional Unagi (eel) specialists. These chefs rely on Tosa's powerful, stable infrared heat to create a texture that is "crispy on the outside while juicy on the inside". This 2kg pack serves as an ideal entry point for home enthusiasts wishing to experience the superior performance of authentic Ubame Oak charcoal without committing to a bulk volume.
Traditionalists recognise three specific regions in Japan for authentic Binchotan production:
- Kishu (Wakayama) - The Gold Standard (Ubame Oak)
- Tosa (Kochi) - The Powerhouse (Ubame Oak)
- Hyuga (Miyazaki) - The Smart Choice (Blue Oak)

Key Features
- The Ubame Connection: Like the famous Kishu charcoal, Tosa is crafted from Ubame Oak (Quercus phillyraeoides), the hardest and densest wood used for charcoal making.
- The "Unagi" Effect: Favoured by eel masters for its high infrared output, which seals in natural juices while crisping the surface ("crispy outside, juicy inside").
- Quarter Cut Versatility: The quarter cut (Maru-Gai) provides manageable pieces that are easier to light than whole logs while maintaining long burn endurance.
- Clean Combustion: Burns with minimal smoke and odour compared to standard lump charcoal, ensuring the food's flavour is unaltered.
- Perfect for Home Use: The 2kg pack is an excellent option for occasional users or those with limited storage space who still demand professional quality.

About Tosa Binchotan
Produced in the Kochi Prefecture, Tosa Binchotan benefits from the region's rugged forestry which yields high-quality Ubame Oak. While Kishu established the method, Tosa artisans perfected the scale of production without compromising quality. The charcoal is fired at temperatures exceeding 1000°C, resulting in a carbon content that produces a metallic ring when struck—the primary indicator of authentic, high-grade charcoal.
