Yoshikawa Premium Nitrided Carbon Steel Induction Deep Fryer - 24cm

The Yoshikawa Deep Fryer is a 24cm nitrided carbon steel pot built for tempura, tonkatsu and karaage at home. A detachable thermometer reads the oil temperature in real time, and the lid flips over to become a draining rack, so excess oil drips straight back into the pot.

Seasoning & Care

The deep fryer pot needs a quick season before first use to start building its natural nonstick patina — the nitrided surface makes this easier than on untreated iron. Full step-by-step instructions are in our carbon steel user guide.

  • Hand wash only. This product is not suitable for the dishwasher.
  • Thermometer Care: The thermometer is not washable. To clean, wipe it with a damp cloth. Do not submerge it in water.

About Yoshikawa

Yoshikawa manufactures in Tsubame-Sanjo and builds its cookware as systems rather than single items. The Cook-Pal Ren line runs from 24cm to 36cm, with lids, steamer inserts and spare handles engineered to the same diameters. Production is entirely in the company's own Japanese facilities.

Use & Care

  • First use: A one-time 5-minute oil seasoning is all it takes.
  • After cooking: Wash with warm water while still warm, dry thoroughly over low heat, then wipe on a thin coat of oil.
  • Storage: Don't leave food sitting in the pan — it's a cooking tool, not a storage container.
  • Rust: Almost always a sign of too little oil. Scrub it off and re-season — the pan will recover.
  • Acidic foods: Tomatoes and vinegar are fine in short bursts — read our guide before simmering them.

  • Patina: Marks, stains and darkening with use are normal — the surface improves as you cook.
