This ingenious grill uses a traditional water jacket—an outer clay pot that you fill with water—to act as a natural insulator, providing a cooler outer body and a stable, moist heat.
Perfect for grilling delicate foods like seafood and vegetables, the gentle, humid heat prevents drying out and enhances flavour. Sized for groups of 2-4 people, this Size 10 model is a beautiful and functional centrepiece for any outdoor dining experience.

How It Works
- Pour water into the outer grill body, up to the inner ridge.
- Place the diatomite trivet inside the grill, ensuring it sits above the water level.
- Add hot binchotan charcoal onto the trivet (approx. 0.5-1kg).
- Place the grill mesh on top and begin grilling.

Important Note on Trivet Maintenance
Please be aware that the inner diatomite trivet is a consumable item. Due to the intense heat of the charcoal, it is designed to crack over time with normal use. This is expected and does not affect the function of the grill. Replacement trivets are available for purchase.

- Uses diatom mud from the Noto Peninsula in Ishikawa Prefecture.
- Diatom mud is an excellent heat insulator. Walls of the grill are over 5cm thick.
- When used with binchotan, the heat is high, consistent, and concentrated. Provides an exceptional barbeque experience.

Use and Maintenance
- Avoid carbon monoxide poisoning. Always grill outdoors in well-ventilated areas.
- Take proper care to extinguish the fire. Do not use water. If water is absorbed, diatom mud becomes brittle. It will also lose its durability.
- When cleaning the grill, do not use water. Instead, gently remove the ash and food residue.
