First use: Simmer rice porridge in your new donabe first — the starch seals the porous clay and strengthens the pot.
Before cooking: Make sure the outside base is completely dry before it goes on the flame — a wet base can crack.
Never heat empty: Always have liquid or food in the pot before heating.
Avoid sudden temperature changes: Don't run cold water into a hot pot — let it cool first.
Storage: Dry thoroughly before putting away to prevent mould in the porous clay.
