Oyanagi Wooden Otoshibuta Japanese Drop Lid
The Oyanagi Wooden Otoshibuta is a traditional Japanese drop lid for nimono and other simmered dishes. Rather than covering the pot, it rests directly on the ingredients, keeping them under the liquid so the stock circulates over the food, seasons it evenly and stops delicate pieces from tumbling and breaking up. It is made from Sawara cypress, a wood long used in Japanese kitchens for its resistance to moisture. Available in 18cm, 20cm and 22cm.
Choose a lid one or two sizes smaller than your pot so it sits on the food inside: an 18cm lid suits a 20cm pan, a 20cm lid a 22cm pan. It pairs well with our Yoshikawa Yukihira saucepans.
What's Included
- 1 x Oyanagi Wooden Otoshibuta Japanese Drop Lid
Key Features
- Even Flavour: Redirects the simmering liquid back over the ingredients so they season evenly with less stock.
- Keeps Shape: Holds ingredients still so potatoes, daikon and fish keep their shape while cooking through.
- Sawara Cypress: Naturally moisture-resistant wood with a light, clean scent.
- Large Handle: Easy to lift out of a hot pot when checking or serving.
- Made in Japan: Produced by Oyanagi Sangyo in Sanjo, Niigata.
Before First Use and Care
Before the first use, soak the lid in water for about two hours and dry it in the shade; this lets the wood take up moisture evenly and reduces the risk of cracking under steam. Boiling it briefly in water, or in the water left from rinsing rice, will soften the natural wood scent. Wet the lid before each use so it absorbs fewer food odours. After cooking, wash promptly in warm water without detergent, drain and air-dry in a shaded, well-ventilated spot. Keep it away from dishwashers, dish dryers and direct sun, which can cause the wood to crack or warp.
