Tanabe Kanagu Nitrided Carbon Steel Induction Frypan - 26cm

Tanabe Kanagu designed this frypan as one object, not a pan with a handle attached: the octagonal walnut grip and its clean urethane finish belong to the same drawing as the pan itself. This 26cm size has a 19.5cm flat base and weighs just 815g — one of the lightest full-size carbon steel frypans we stock.

The body is 1.6mm nitrided steel — the heat treatment hardens the surface and makes it markedly more rust-resistant than untreated iron — and the flat base keeps it stable on induction as well as gas.

Seasoning & Care

About Tanabe Kanagu

Tanabe Kanagu works in Tsubame-Sanjo and is best known for copper — pancake and tamagoyaki pans used in professional kitchens. Its 'Watashi no Kodawari' iron range applies the same finishing to nitrided steel, with walnut handles and body joints treated separately from the cooking surface.

Use & Care

  • First use: A one-time 5-minute oil seasoning is all it takes.
  • After cooking: Wash with warm water while still warm, dry thoroughly over low heat, then wipe on a thin coat of oil.
  • Storage: Don't leave food sitting in the pan — it's a cooking tool, not a storage container.
  • Rust: Almost always a sign of too little oil. Scrub it off and re-season — the pan will recover.
  • Acidic foods: Tomatoes and vinegar are fine in short bursts — read our guide before simmering them.
