Pork Tenderloin with Vegetable Stuffing | Happycall Double Pan Recipes

When preparing pork tenderloin, you may use any stuffing you prefer. The purpose of this video is to show you how to using a double pan to cook a thick pork tenderloin.

Tips

  • Cook time in a conventional oven is about 40 minutes. A double pan takes about 20 to 30 minutes.
  • A double pan ensures that the meat is moist and tender inside while fully grilled on the outside.
  • Variations are numerous. You may refer to other popular recipes.

Ingredients  

  • Pork lion 300g - 450g a piece (thickness about 1.5cm)
  • 1 Carrot, 1 asparagus, 1 cucumber (or any stuffing you prefer)
  • Cotton string

Steps

  1. Use a meat mallet tenderiser. Please refer to the video and note how the flat part of the mallet is used to tenderise the meat.

  2. Season one side of the meat with salt and pepper.
  3. Prepare the stuffing. You may use any stuffing or sauce of your choice, but choose a stuffing that can sustain a long cooking time. Our favourite is asparagus and mushroom. In the demonstration, you will see carrots and cucumbers being used. Cut vegetables in long strips.
  4. Place the meat with the seasoned side up (to avoid burning the seasoning). Put the stuffing in the center.

  5. As you roll the meat, press down as hard as possible to create a tight roll. Do not allow too much space inside.
  6. After rolling the meat, make sure the end is facing downward. Tie with string. Refer to this video to learn how to tight the meat.
  7. Preheat the double pan for at least 30 seconds over medium high heat. The pork loin will release oil. You may spray some oil if you prefer.
  8. Place the meat in the double pan, and use tongs to ensure every side is seared. This keeps the meat moist.

  9. Close the lid. Turn down the heat to medium. Cook for 10-15 minutes (depending on the thickness). If you are not familiar with the double pan, you may partially open it and check the readiness of the meat.
  10. Flip the pan with both hands and cook for another 10-15 minutes.
  11. If you prefer a more grilled effect, you may pan-fry the meat for a longer time with the  lid open.
  12. Enjoy!

Additional information: 

  1. Remember a reasonably heated pan and heated oil (not overheating) are key.
  2. Users will need basic cooking techniques and common sense (understanding of proper heat control, knowing how to check the food periodically, and so on).
  3. Heat level, Please note that the heat levels shown below are for general reference only. Every cooktop is different. The following ranges apply if 10 is the maximum.
  • Low heat: the heat level is 1-2.
  • Medium low heat: the heat level is 3-4.
  • Medium heat: the heat level is 5.
  • Medium high heat: the heat level is 7-8.
  • High heat: the heat level is 9-10.
