Takumi Japan Carbon Steel Induction Frypan - 26cm

Takumi is the only carbon steel we stock that is not nitrided. The body is bare 1.8mm iron, pressed from 98.8% high-purity iron with a textured 'Magma Plate' surface that grips seasoning oil from the first use. This 26cm frypan is the largest of the three, with a 21cm flat base — the widest cooking surface in the range — for family-sized shallow-frying and searing.

Untreated iron rusts if left wet, so this pan has to be dried on the heat after every wash — a normal part of owning traditional carbon steel, and the trade for a thick body at an entry-level price.

Seasoning & Care

As a traditional carbon steel pan, it needs seasoning before first use to build its natural nonstick surface. Because this pan is not nitrided, it requires prompt and thorough drying after every wash to prevent rust — this is a normal characteristic of pure carbon steel and part of the traditional care process. About Takumi Japan

Takumi Japan works in heat-treated 'Magma Plate' iron rather than nitrided steel. The textured surface is formed during heat treatment rather than applied afterwards, which is why it holds seasoning well and why the pans sit below nitrided equivalents on price.

  • First use: A one-time 5-minute oil seasoning is all it takes.
  • After cooking: Wash with warm water while still warm, dry thoroughly over low heat, then wipe on a thin coat of oil.
  • Storage: Don't leave food sitting in the pan — it's a cooking tool, not a storage container.
  • Rust: Almost always a sign of too little oil. Scrub it off and re-season — the pan will recover.
  • Acidic foods: Tomatoes and vinegar are fine in short bursts — read our guide before simmering them.
