Reviews of the Happycall double pan pull in two directions: some praise how well it cooks, others complain that it leaks. Both come from real users. This review explains why, from our side of the counter as the retailer.

This review is based on our perspective as a retailer and on the feedback our customers give us. Not every double pan owner will agree with it, and that is fair enough.
We have developed and filmed a series of Happycall double pan recipes in our own kitchen, which is where most of what follows comes from.
Skip the user guide and the pan will not work
Happycall's commercial video presents perfection, and real cooking does not work that way. This is the general view we hear from customers, including the ones who enjoy using the pan.
Our recipe videos show how it actually behaves. When our demonstrator follows the chicken recipe, the oil traps fill with juice. The pan makes cooking easier; it is not a magic pan. Smoke and spills are reduced substantially, not eliminated — particularly when you open it to season or add ingredients.
Video shows the limitations as well as the advantages, which is why we recommend watching them before your first cook. None of them are long.

Does the double pan leak?
Not when it is used as designed — sealing is the whole point of the pan. But the design has to be understood.
Without the silicone gasket, it will leak. If the oil trap is not cleared before you flip, your cooktop will be messy. There is also a steam vent at the back, so flip the pan on a slight tilt or juice will escape through it.
Every leakage complaint we have received traces back to one of those three things. Follow our recipes and the user guide and it holds.

Can it grill, and is the other side cold when flipped?
A grill effect depends on how well heat is conducted on both sides.
We compared different generations of the pan, from the first model of 1999 through to the current ones, cooking chickens of similar weight in each. The newer models produce better results, and the reason is heat conduction rather than heating speed — what matters is how evenly the heat spreads, not how fast the pan gets hot.
The uncut video we filmed in 2020 used a 2018 titanium model, and the grilling was acceptable rather than exceptional. The 2021 video used an IH Synchro pan and the skin came out properly grilled.
One note on that: tastes differ between Asia and the West. If you want the chicken drier than ours looks, give it another five minutes.
Compared with the oil and grease an oven leaves behind, cleaning up after a double pan is a considerable improvement.
Who should not buy one?

The double pan suits cooks with basic kitchen confidence. If you are still learning heat control, expect a longer run-in; if you know the basics, one or two cooks is usually enough to get the measure of it.
State the obvious: the lid is a pan, so you cannot see the food while it cooks. You need enough general experience to judge timing even with a recipe in front of you.
Heat matters more than usual here. Medium to medium-high is right for sealed cooking — too low and the food steams itself soggy.
It is also not a light pan. The standard size is about 1.7kg and the jumbo about 1.9kg before food goes in, so we do not recommend it if you have wrist trouble.
Non-stick coatings have a limited life
If you are told a non-stick pan will last ten years, treat it with scepticism. In our experience non-stick cookware lasts two to three years with proper care, and the double pan is no exception. No pan is right for everyone. Our job as a retailer is to make sure you know what a product does well and where it stops.
