What is a Santoku Knife?

The Santoku is a beloved all-purpose knife from Japan. Its name translates to "three virtues" or "three uses," which refers to its excellence at the three core cutting tasks: slicing (fish), dicing (vegetables), and mincing (meat). With its versatile shape and relatively flat profile, it's a staple in both home and professional kitchens, adept at handling a wide variety of ingredients with ease.

Care Instructions

  • Hand wash with warm water and mild detergent straight after use, then dry thoroughly before storing.
  • Not dishwasher safe — heat and harsh detergents damage the edge and wooden handle.
  • Do not cut frozen food or bones, and avoid twisting the blade.
  • Sharpen regularly with a whetstone or knife sharpener to maintain the edge.
