River Light Kiwame Nitrided Carbon Steel Induction Wok - 28cm

The Kiwame ('Ultimate') series comes from River Light, a Japanese maker that produces carbon steel pans and nothing else. This 28cm wok is 7.5cm deep with a single pouring rim, and the wooden handle unscrews so the pan outlives it. Available as the wok alone or with a matching stainless steel lid.

The nitriding hardens the steel surface right through, not as a coating that can wear off, so it takes seasoning readily from first use and will not rust the way untreated iron does. A replacement handle is sold separately.
